This medium-grained Fleur de Sel from Brittany is obtained from fine, floating salt crystals, which form plate-like on the water surface in the sea salt works. This is skimmed off by hand with the help of the “lousse”, a kind of ladle. The typical flavour is given by the algae Dunaliella salina, among others.
Le Guérandais is not washed, is unground and is simply dried in woven baskets in the sun. Ideal for barbecues, in salad dressings, for seasoning fish and vegetables or in combination with chocolate.
